Foresta is an immersive fusion of architecture and culinary performance, conceived by Felipe Escudero for chef Rodrigo Pacheco’s visionary gastronomy. The design reimagines the restaurant as a spatial narrative where nature, craft, and culture converge: sculptural volcanic-stone cooking islands become stages for live culinary performance, and an undulating reflective ceiling channels light and atmosphere throughout the room. Materials like concrete, steel, and native volcanic stone are shaped into organic forms that balance contemporary refinement with ancestral tradition, honoring Ecuador’s biodiversity and indigenous knowledge systems. Every detail — from the custom furniture to the choreography of the kitchen — reflects a commitment to sustainability, sensory experience, and the poetic interplay between land and dining.
